A simple rue will thicken your turkey stock and give you a beautiful gravy.
Ingredients
- 1 ½ cups turkey stock
- 6 tablespoons pan drippings from cooking the turkey
- 1 sprig thyme
- 3 tablespoons flour
- 3 tablespoons butter
- Salt and pepper, to taste
Method
- Bring the stock to a boil. Add the drippings and the thyme. In a separate sauce pot slowly add the butter and flour. Cook on medium- low heat stirring constantly until the flour has cooked slightly, 7-8 minutes. Slowly add the turkey stock to the flour mixture, whisking constantly until all the stock has been added. Season to taste and serve.
