Tomato and Garlic Bacon Jam

This easy and versatile jam is a perfect garnish for just about any meat.

Ingredients

  1. 1 lb. thick-cut bacon, chopped
  2. ½ large yellow onion, thinly sliced
  3. 1 medium clove garlic, minced
  4. 1 ½ tablespoons pure maple syrup
  5. 2 ¼ teaspoons balsamic vinegar
  6. 1 teaspoons Dijon mustard
  7. ½ teaspoon Worcestershire sauce
  8. 3 tablespoons fresh ripe diced tomatoes
  9. ½ teaspoon brown sugar
  10. Salt and pepper to taste

Method

  1. Cook bacon in a medium Dutch oven or heavy-bottomed saucepan over medium heat until browned, about 5 minutes. Add onions and garlic and cook, stirring, until translucent and softened, 5 to 7 minutes. Drain excess bacon grease from the pan.
  2. Stir in remaining ingredients and reduce heat to low. Simmer uncovered, stirring occasionally, until reduced and thickened to a jam-like consistency, about 1 hour.
