This easy and versatile jam is a perfect garnish for just about any meat.
Ingredients
- 1 lb. thick-cut bacon, chopped
- ½ large yellow onion, thinly sliced
- 1 medium clove garlic, minced
- 1 ½ tablespoons pure maple syrup
- 2 ¼ teaspoons balsamic vinegar
- 1 teaspoons Dijon mustard
- ½ teaspoon Worcestershire sauce
- 3 tablespoons fresh ripe diced tomatoes
- ½ teaspoon brown sugar
- Salt and pepper to taste
Method
- Cook bacon in a medium Dutch oven or heavy-bottomed saucepan over medium heat until browned, about 5 minutes. Add onions and garlic and cook, stirring, until translucent and softened, 5 to 7 minutes. Drain excess bacon grease from the pan.
- Stir in remaining ingredients and reduce heat to low. Simmer uncovered, stirring occasionally, until reduced and thickened to a jam-like consistency, about 1 hour.
