Tomato Jam

This jam can be used for a number of things and is a great alternative to canning summer tomatoes.

Ingredients

  1. 2 lbs. Fresh Tomatoes
  2. 1/4 Cup Brown Sugar
  3. 1/4 Cup Apple Cider Vinegar
  4. 1 tbsp. Salt

Method

  1. Core tomatoes and cut them into quarters.
  2. Combine tomatoes, sugar, vinegar, and salt in a medium sauce pot.
  3. Allow to simmer on low for about 2 hours.
  4. Put the jam in a blender and blend until smooth. You may strain if you like but doing so will thin down the jam and it may need to reduce further.
