This jam can be used for a number of things and is a great alternative to canning summer tomatoes.
Ingredients
- 2 lbs. Fresh Tomatoes
- 1/4 Cup Brown Sugar
- 1/4 Cup Apple Cider Vinegar
- 1 tbsp. Salt
Method
- Core tomatoes and cut them into quarters.
- Combine tomatoes, sugar, vinegar, and salt in a medium sauce pot.
- Allow to simmer on low for about 2 hours.
- Put the jam in a blender and blend until smooth. You may strain if you like but doing so will thin down the jam and it may need to reduce further.
