Watermelon Rind Pickles

This sweeter pickle is great on its own or as an accompaniment for charcuterie or dessert.

Ingredients

  1. 1 pound watermelon rind
  2. ½ cup apple cider vinegar
  3. ½ cup water
  4. ½ cup sugar
  5. 1 ounce ginger
  6. 2 tbsp. kosher salt
  7. 1 tsp red pepper flakes

Method

  1. Remove skin from rind and cut into 1/2 inch cubes. Place in a sanitized jar or container.
  2. Combine vinegar, water, sugar, ginger, salt, and chili flake in a sauce pot. Bring to a simmer.
  3. Once simmering and sugar and salt are dissolved, remove liquid from heat. While still hot, pour liquid over the rind.
  4. Allow to refrigerate overnight or hold pickles for up to a month.
