Winter Greens Gratin

Use your favorite winter greens for this easy, creamy and cheesy dish.

Ingredients

  1. 1 tbsp unsalted butter
  2. 3 lbs. kale, center ribs and stems removed, torn into large pieces
  3. Kosher salt
  4. 2 ½ tablespoons extra-virgin olive oil
  5. 14 tablespoons coarse fresh breadcrumbs
  6. 5 tablespoons finely grated parmesan
  7. 1 shallot, sliced fine
  8. 1 cup heavy cream
  9. 10 tablespoons whole milk
  10. 4 garlic cloves, smashed
  11. 1/4 teaspoon freshly ground nutmeg
  12. Freshly ground black pepper
  13. 10 tablespoons coarsely grated Gruyère cheese

Method

  1. Preheat the Egg to 400 indirect heat. Place a large saucepan on the Egg and let it come to temp.
  2. Once hot add olive oil and butter and saute kale and shallots for 10 mins. Then add garlic and saute for 3 more minutes or until fragrant.
  3. After the kale has wilted down a bit, add the cream and then cover with cheese and breadcrumbs, close the grill and let sit unstirred for about 15-20 mins.
  4. Let rest for 10-15 mins then serve.
