Use your favorite winter greens for this easy, creamy and cheesy dish.
Ingredients
- 1 tbsp unsalted butter
- 3 lbs. kale, center ribs and stems removed, torn into large pieces
- Kosher salt
- 2 ½ tablespoons extra-virgin olive oil
- 14 tablespoons coarse fresh breadcrumbs
- 5 tablespoons finely grated parmesan
- 1 shallot, sliced fine
- 1 cup heavy cream
- 10 tablespoons whole milk
- 4 garlic cloves, smashed
- 1/4 teaspoon freshly ground nutmeg
- Freshly ground black pepper
- 10 tablespoons coarsely grated Gruyère cheese
Method
- Preheat the Egg to 400 indirect heat. Place a large saucepan on the Egg and let it come to temp.
- Once hot add olive oil and butter and saute kale and shallots for 10 mins. Then add garlic and saute for 3 more minutes or until fragrant.
- After the kale has wilted down a bit, add the cream and then cover with cheese and breadcrumbs, close the grill and let sit unstirred for about 15-20 mins.
- Let rest for 10-15 mins then serve.
