Grilled Vegetables with Aioli

Brining your vegetables takes the flavor to another level.

Ingredients

  1. 3/4 cups Mayonnaise
  2. 2 1/4 ea garlic cloves
  3. 4 tablespoons olive oil
  4. 1/2 tsp lemon juice
  5. 1/2 tsp cayenne
  6. Salt to taste
  7. 1 1/2 lbs mixed vegetables
  8. 1 qt of Brine (see recipe)

Method

  1. Cover your vegetable with brine and let those brine for 30 mins to 1 hour.
  2. Strain the vegetables from the brine, pat dry. Make aioli then grill vegetables until desired texture and toss with aioli.
