The spiced sweet potatoes add a great twist to this traditional dish.
Ingredients
- 24 ounces sweet potato
- 1 ounce pumpkin puree
- ½ cup brown sugar
- 1 tsp. Chinese Five Spice Powder
- ½ tsp. nutmeg
- 1 tbsp. pineapple juice
- 2 tbsp. butter
- 2 tbsp. oil
- Salt and pepper to taste
Method
- Preheat Egg to 350 F for indirect cooking. Peel sweet potatoes and toss with oil, salt, and pepper. Wrap in foil and roast until softened but not fully cooked, about 25 to 30 minutes. Set aside and let cool.
- Combine Pumpkin puree, five spice, pineapple juice, butter, and salt and pepper in a bowl and mix together.
- Once cooled, cut sweet potatoes into 1/2 inch cubes and toss with spice and pumpkin mixture. Place into a well oiled cast iron pan and sprinkle brown sugar over top. Place on the grill and allow to bake until sugar is caramelized, about 25 minutes. Remove from grill and serve.
