Smoked Chorizo Salad

Almond smoking wood gives the chorizo a bit of nuttiness.

Ingredients

  1. 1 lb chorizo, whole
  2. 10 oz salad mix
  3. 2 oz arugula
  4. 6 oz heirloom tomatoes, diced
  5. 6 oz aged gouda, shredded
  6. 2 tablespoons red wine or sherry vinegar
  7. 1/2 c. olive oil
  8. Salt and pepper to taste

Method

  1. Preheat Egg to 225ºF with a plate setter and set up for smoking. Smoke chorizo for 45 min. - 1 hr.
  2. Combine the last six ingredients to make dressing and toss to combine. Taste for seasonings and adjust to your liking. Serve with rested, crumbled chorizo.
