Almond smoking wood gives the chorizo a bit of nuttiness.
Ingredients
- 1 lb chorizo, whole
- 10 oz salad mix
- 2 oz arugula
- 6 oz heirloom tomatoes, diced
- 6 oz aged gouda, shredded
- 2 tablespoons red wine or sherry vinegar
- 1/2 c. olive oil
- Salt and pepper to taste
Method
- Preheat Egg to 225ºF with a plate setter and set up for smoking. Smoke chorizo for 45 min. - 1 hr.
- Combine the last six ingredients to make dressing and toss to combine. Taste for seasonings and adjust to your liking. Serve with rested, crumbled chorizo.
