Kebabs are a fun and different side dish idea.
Ingredients
- 1 lb Denver steak, dry aged and dry rubbed, cut into 1’’ cubes
- 1 lb summer squash, skinned and deseeded, cut into 1’’ cubes
- Rub of choice
- For The Dressing:
- ½ head black garlic, removed from the peel
- 1 small clove fresh garlic, minced
- ¼ cup red wine vinegar
- 2 tsp mustard
- 1 tbsp honey
- ¼ cup olive oil
- Salt and pepper to taste
- 8 slices white sourdough (think classic whitebread)
- 2 cups shredded cheese, for Grilled Cheese Class on 7-16-24, we used a mix of mozzarella, provolone, and Swiss
- 1 ¾ cup mayo
- Rub of choice, preferably something high in salt and little to no sugar
Method
- Preheat an Egg to 400 F and set up direct heat. Also preheat the flat top to 400 F.
- Assemble the kebabs on the skewers(if wooden be sure to pre-soak the skewers in water). For the dressing, add all ingredients except the olive oil to a high powered blender. Blend until smooth and slowly pour in olive while the blender is running. If the dressing is not binding properly add a tbsp of mayo. Cover and reserve for later.
- Once the Egg is preheated, place the skewers on and begin cooking, flipping about halfway through, about 7 mins per side. Save the dressing for after the skewers come off the grill. Once cooked, remove from the grill and dress with the black garlic vinaigrette, also season with more salt and pepper.
- For the grilled cheese, coat one side of the bread with mayo. Place the mayo side UP allowing the inside of the sandwich to be crispy, we will cook that side first. Once crispy, 3-4 mins, flip and then add cheese distributed evenly on each slice. Allow the cheese to begin to melt and the bread to get crispy on the outside, 5-7 mins. Flip one slice of bread onto the other forming a grilled cheese sandwich. Season well with rub of choice, flip and repeat. Continue cooking until the cheese is fully melted and the bread is golden brown.
- Remove the grilled cheese from the grill, slice and serve immediately with steak kebabs.
