This pork shoulder is great for serving on a bun or on its own.
Ingredients
- 2 lbs. boneless pork shoulder
- For the Rub:
- 1 tbsp. paprika
- 1/2 tbsp. black pepper
- 1 tsp cayenne
- For the Baste
- 1/4 cup bourbon
- 1 tbsp. molasses
- 1 cup cider vinegar
- 1/2 cup water
- 1 chopped chipotle pepper
- 2 tablespoons salt
- 1/2 tbsp. crushed red pepper
- 1/2 tbsp. black pepper
- 1 tsp cayenne pepper
- 4 ounces of applewood for smoking
Method
- To make the Rub: mix all the ingredients together in a small bowl.
- To make the Baste: mix the ingredients together in a saucepan, and simmer for 5-7 minutes.
- Rub pork shoulder on all surfaces with rub mixture; cover and refrigerate for up to 24 hours.
- Prepare the Egg for medium heat. Smoke pork shoulder with applewood. Make sure to maintain between 250-300 degrees until the internal temperature of the pork shoulder registers between 170-180 degrees.
- During the final hours of cooking, baste the shoulder every 20-30 minutes.
