Asian Spare Ribs

Asian style smoked spare ribs pair beautifully with a tall glass of white wine or even some sake.

Ingredients

  1. 2 ½ racks spare ribs, peeled
  2. 2 ½ ounces bbq rub of choice
  3. 2 ½ ounces brown sugar
  4. 2 ½ ounces kosher salt
  5. Plum wood, for smoking
  6. For The BBQ Sauce:
  7. 9 ½ tablespoons maple syrup
  8. 2 teaspoons minced ginger
  9. 1 teaspoon sriracha
  10. 1 teaspoon toasted sesame oil
  11. 1 ½ tablespoons soy sauce
  12. 1 teaspoon salt

Method

  1. Evenly rub the ribs with the dry rub and let sit overnight covered in the refrigerator.
  2. Combine all the ingredients for the BBQ sauce and set aside.
  3. Preheat EGG to 225º using indirect heat and smoke for 3 hours. Wrap in foil and cook at 250º for 2 hours. The last hour, baste with BBQ sauce. Let rest for 15 minutes and serve with any additional sauce.
