Asian style smoked spare ribs pair beautifully with a tall glass of white wine or even some sake.
Ingredients
- 2 ½ racks spare ribs, peeled
- 2 ½ ounces bbq rub of choice
- 2 ½ ounces brown sugar
- 2 ½ ounces kosher salt
- Plum wood, for smoking
- For The BBQ Sauce:
- 9 ½ tablespoons maple syrup
- 2 teaspoons minced ginger
- 1 teaspoon sriracha
- 1 teaspoon toasted sesame oil
- 1 ½ tablespoons soy sauce
- 1 teaspoon salt
Method
- Evenly rub the ribs with the dry rub and let sit overnight covered in the refrigerator.
- Combine all the ingredients for the BBQ sauce and set aside.
- Preheat EGG to 225º using indirect heat and smoke for 3 hours. Wrap in foil and cook at 250º for 2 hours. The last hour, baste with BBQ sauce. Let rest for 15 minutes and serve with any additional sauce.
