Tomato sauce is an easy way to add a little flare to your side dish!
Ingredients
- 2 lbs fresh summer vegetables, for class we used garden variety peppers and blanched brussel sprouts (anything that will grill up nicely)
- 1 cup canned or fresh tomato sauce
- Basil for garnish
- Smoking wood, for class we used almond wood
- Salt and pepper to taste
Method
- Preheat the Egg to 400° and set up direct heat. Throw a chunk of almond wood on the grill grates.
- Once hot, place the vegetable on the grill and grill directly just long enough to add a little char and smoke to the veg. Remove from the grill and slice the veg thinly, toss with warm tomato sauce and season with salt and pepper to taste. Place the veg on a serving platter and garnish with basil.
