Carolina Cole Slaw

A sweet, spicy and tangy slaw that is a perfect side for BBQ.

Ingredients

  1. For The Dressing:
  2. 1 cup apple cider vinegar
  3. 13 tablespoons ketchup
  4. 6 tablespoons sugar
  5. 1 tablespoon freshly ground black pepper
  6. 1 tablespoon hot sauce, preferably Texas Pete
  7. For The Slaw:
  8. 1 ½ large head green cabbage, finely shredded on a mandoline or by hand
  9. 1 ½ large carrot, peeled and grated on the large holes of a box grater
  10. 1 cup sugar
  11. 8 tablespoons kosher salt

Method

  1. For The Dressing: Whisk together vinegar, ketchup, sugar, black pepper, and hot sauce in a small bowl.
  2. For The Slaw: Combine cabbage and carrot in a large bowl. Sprinkle it with sugar and salt and toss to combine. Let stand five minutes, then transfer to a large colander and rinse thoroughly under cold running water.
  3. Transfer vegetables to a strainer and drain until relatively dry.
  4. Pour dressing over vegetables and toss to coat. Adjust seasoning to taste with salt, pepper, and/or sugar.
