Reverse Seared Hanger Steak

A classic steak and frites is a new twist on breakfast.

Ingredients

  1. 3 ½ pounds hanger steak, trimmed
  2. Salt and freshly ground pepper

Method

  1. Rub your hanger steak with salt and pepper or your preferred steak rub the night before.
  2. Preheat the Egg to 250ºF with plate setter for indirect heat. Place hanger steak on stainless steel grate and roast for 1-2 hours or until internal temperature reaches 110ºF. Let rest for 20 minutes covered with a resting blanket.
  3. Meanwhile, replace the plate setter with a cast iron grate and raise the temp of your Egg to 450ºF. Place steaks directly on the grill until desired doneness is achieved.
  4. Let rest once more, slice and serve with potatoes of choice and garnish with a sunny side up egg. Enjoy!
