This slaw is a great, fresh side for any grilling get together.
Ingredients
- 1 tsp fresh ginger
- 1 tbsp. rice wine vinegar
- ½ tsp soy sauce
- 2 tsp lime juice
- 1 tsp sesame oil
- 4 ounces Napa cabbage
- 1 ea red pepper
- ½ ea carrot (whole)
- 2 sprigs green onion
- 1 bunch cilantro
- Salt & pepper to taste
Method
- Preheat egg to 350 degrees Fahrenheit for direct heat.
- Peel ginger and slice thinly. Combine ginger, rice wine vinegar, soy sauce, lime juice, and sesame oil in a blender or food processor. Blend until smooth.
- Cut a carrot in half lengthwise and grill for 4 minutes on each side or until lightly softened. Set aside and allow to cool.
- Seed red pepper and grill on each side for about 2 minutes each. Remove from grill and set aside to cool.
- Shred cabbage, julienne pepper, cut carrot, chiffonade cilantro, and cut green onion on a bias. Combine all ingredients in a bowl.
- Dress slaw with dressing. Toss and season to taste.
