Elotes

Elotes are a traditional street food in Mexico.

Ingredients

  1. ¼ cup mayonnaise
  2. ¼ cup greek yogurt
  3. ¼ cup finely crumbled cotija or parmesan cheese, plus more for serving
  4. 1 tablespoon Tajin, plus more for serving
  5. ¼ cups finely chopped cilantro leaves and tender stems
  6. 4 ears shucked corn
  7. ½ lime, cut into wedges

Method

  1. Preheat the Egg to 425º using direct heat and a cast iron grate.
  2. Combine mayonnaise, greek yogurt in a large bowl. Stir until combined and set aside.
  3. Grill the corn until it is charred on all sides, turning occasionally, for about 10 minutes.
  4. Transfer corn to bowl with mixture and use a large spoon to evenly coat corn on all sides with mixture. Sprinkle it with extra cheese, cilantro, and Tajin and serve immediately with lime wedges.
