Elotes are a traditional street food in Mexico.
Ingredients
- ¼ cup mayonnaise
- ¼ cup greek yogurt
- ¼ cup finely crumbled cotija or parmesan cheese, plus more for serving
- 1 tablespoon Tajin, plus more for serving
- ¼ cups finely chopped cilantro leaves and tender stems
- 4 ears shucked corn
- ½ lime, cut into wedges
Method
- Preheat the Egg to 425º using direct heat and a cast iron grate.
- Combine mayonnaise, greek yogurt in a large bowl. Stir until combined and set aside.
- Grill the corn until it is charred on all sides, turning occasionally, for about 10 minutes.
- Transfer corn to bowl with mixture and use a large spoon to evenly coat corn on all sides with mixture. Sprinkle it with extra cheese, cilantro, and Tajin and serve immediately with lime wedges.
