Korean Miso and Honey Glazed Fish

Steak fish works well for this recipe because the fish is brushed with a glaze and roasted until flaky.

Ingredients

  1. 1 1/2 lb. steak fish of choice
  2. Basic brine (6 parts water, 1 part salt/sugar)
  3. 2 tablespoons mild honey
  4. 1 1/2 tablespoons rice vinegar
  5. 1 tablespoon gochujang
  6. 1 tablespoon white miso paste
  7. 1 teaspoon soy sauce
  8. 2 black garlic cloves, peeled and minced
  9. 1 teaspoon fresh ginger
  10. 1 teaspoon toasted sesame oil
  11. Toasted sesame seeds, for garnish

Method

  1. Brine the fish for about 30 minutes. Remove from brine and pat dry.
  2. In a small bowl, whisk together or use a fork to combine the honey, vinegar, gochujang, miso, soy sauce, garlic, ginger and sesame oil. Separate out about 1/3 of the mixture and set aside. Use the rest to brush over the fish. Let the fish rest in the refrigerator for at least 30 minutes but up to an hour to let the fish marinate.
  3. Preheat the Egg to 350º using indirect heat. Once preheated, roast the fish until nice and flaky about 10-15 min.
  4. Brush the remaining glaze over the fish and garnish with toasted sesame seeds.
