Steak Jerky 2 Ways

Cutting the eye of round differently allows for different textures in the jerky.

Ingredients

  1. 1 lb. eye of round
  2. For Marinade:
  3. 1 cup Worcestershire
  4. 2/3 cup brewed coffee
  5. 1/4 cup brown sugar
  6. 2 tbsp. chili paste
  7. 3 crushed garlic cloves
  8. 1/4 tsp. whole black peppercorns
  9. Juice of 1 lime

Method

  1. Separate the eye of the round into 2 portions. Cut one portion with the grain and the other portion against that grain. Cut both into thin strips and place them into separate gallon bags.
  2. Combine marinade ingredients in a medium saucepan. Cook over medium heat while whisking occasionally until sugar dissolves.
  3. Allow the marinade to cool then divide the marinade between the 2 bags. Allow to marinade for at least 8 hours.
  4. Pre-heat the Egg to 200 degrees and set up for indirect cooking.
  5. Keeping the meat separate, remove from marinade and pat dry. After drying, lay on the grate and dehydrate for 4 hours.
  6. After the meat is finished drying, it should bend but not break. Enjoy or store in an air-tight container to keep from collecting moisture.
