>Easily turn elotes into a delicious salad by adding a protein of your choice.
Ingredients
- 1 ½ pounds ground cherries and/or tomatillos
- 6 ea local corn on the cob
- For The Dressing:
- ¼ cup mayo
- ¼ cup grated parmesan cheese
- 1 tsp garlic paste
- 2 tbsp chopped fresh cilantro
- Juice and zest of a lime
- Salt and pepper to taste
- Taijin for garnish
Method
- Preheat Egg to 425º using direct heat and a cast iron grate. Grill the corn until slightly charred. Remove from the grill and remove from the cob.
- Toss the corn with the tomatillos and add the dressing. Season to taste with salt and pepper. Sprinkle with Taijin and serve.
- For Class on 8-29-23 - smoked leg of goat was the protein of choice.
