Elotes Salad

>Easily turn elotes into a delicious salad by adding a protein of your choice.

Ingredients

  1. 1 ½ pounds ground cherries and/or tomatillos
  2. 6 ea local corn on the cob
  3. For The Dressing:
  4. ¼ cup mayo
  5. ¼ cup grated parmesan cheese
  6. 1 tsp garlic paste
  7. 2 tbsp chopped fresh cilantro
  8. Juice and zest of a lime
  9. Salt and pepper to taste
  10. Taijin for garnish

Method

  1. Preheat Egg to 425º using direct heat and a cast iron grate. Grill the corn until slightly charred. Remove from the grill and remove from the cob.
  2. Toss the corn with the tomatillos and add the dressing. Season to taste with salt and pepper. Sprinkle with Taijin and serve.
  3. For Class on 8-29-23 - smoked leg of goat was the protein of choice.
