Smoked Leg of Goat

Smoking meat is a great way to bring out the flavor.  Toss in a chunk of your favorite smoking wood to kick it up a notch!

Ingredients

  1. 1 1/2 lb. goat leg
  2. Kosher salt and freshly ground black pepper
  3. Canola oil

Method

  1. Brine the leg of the goat in a simple brine solution for 3-5 hrs.
  2. Remove from brine and rub with salt and pepper 1-2 hours before cooking. Place on a plate in the refrigerator. Remove the goat from the refrigerator about 30 minutes before cooking.
  3. Preheat Egg to 250˚F using indirect heat.
  4. Cover loosely with foil. Check every hour, and cook until the internal temperature reaches 190º. Remove from heat and let rest for 30-45 minutes. Once it has rested, shred it into even pieces and serve!
