Summer Succotash

Succotash is a perfect side for any time of year.  Be sure the vegetables are fresh and in season.

Ingredients

  1. 3 tablespoons toasted sesame oil
  2. 3/4 red onion
  3. 1 1/2 teaspoons minced garlic
  4. 4 1/2 ounces bacon, finely chopped
  5. 1 1/2 lb. seasonal vegetables
  6. Kosher salt and freshly ground white pepper, to taste

Method

  1. In a large skillet, heat the sesame oil over medium heat. Saute the onion and garlic until softened, about 2 minutes. Add the bacon and cook until it has rendered its fat and begins to crisp, about 5 minutes.
  2. Preheat the Egg to 425º using direct heat and a cast iron grate. Grill the vegetables until softened and grill marks form. Remove from the grill, toss in the bacon-onion mixture and adjust seasonings as needed. Serve immediately.
