Succotash is a perfect side for any time of year. Be sure the vegetables are fresh and in season.
Ingredients
- 3 tablespoons toasted sesame oil
- 3/4 red onion
- 1 1/2 teaspoons minced garlic
- 4 1/2 ounces bacon, finely chopped
- 1 1/2 lb. seasonal vegetables
- Kosher salt and freshly ground white pepper, to taste
Method
- In a large skillet, heat the sesame oil over medium heat. Saute the onion and garlic until softened, about 2 minutes. Add the bacon and cook until it has rendered its fat and begins to crisp, about 5 minutes.
- Preheat the Egg to 425º using direct heat and a cast iron grate. Grill the vegetables until softened and grill marks form. Remove from the grill, toss in the bacon-onion mixture and adjust seasonings as needed. Serve immediately.
