Chocolate Coconut Cherry Bar

These dessert bars have a little bit of everything and are sure to be a crowd pleaser.

Ingredients

  1. ½ cup butter (softened)
  2. ½ cup white sugar
  3. 1 each egg
  4. 1 tsp. vanilla extract
  5. 1 cup all purpose flour
  6. ¼ tsp salt
  7. ½ tsp baking powder
  8. ¼ cup chopped almonds
  9. ¼ cup maraschino cherries
  10. ¼ cup coconut flakes
  11. ¼ cup chocolate chips

Method

  1. Preheat Egg to 375 degrees Fahrenheit and set up for indirect cooking.
  2. Set out butter and allow to come to room temperature. Once softened, mix together butter and sugar in a mixer with a paddle attachment scraping the sides of the bowl as needed. Once the butter and sugar are creamed, add in egg and vanilla and allow to incorporate.
  3. Combine flour, salt, and baking powder. Slowly add the dry mixture to the wet to avoid making a mess and allowing it to incorporate.
  4. Once dry and wet ingredients are combined, fold in cherries, coconut, and chocolate chips. Evenly spread mixture in a greased baking pan and bake for 25 minutes or until a pick comes out of the middle clean. Allow to cool, cut evenly, and serve.
