Flourless Chocolate Cake

A silky smooth, decadent chocolate cake.

Ingredients

  1. 4 ounces fine-quality bittersweet chocolate (not unsweetened)
  2. 1 stick unsalted butter
  3. ¾ cups sugar
  4. 3 large eggs
  5. ½ cup unsweetened cocoa powder plus additional for sprinkling

Method

  1. Preheat Egg to 375°F using indirect heat. Grease an 8-inch grill safe baking pan.
  2. Chop chocolate into small pieces. In a double boiler melt chocolate with butter, stirring, until smooth. Beat sugar and eggs until light and fluffy. Remove top of the double boiler from heat and very slowly whisk chocolate into egg mixture. Sift cocoa powder over chocolate mixture and whisk until just combined. Pour batter into the pan and bake for 25 minutes, or until the top has formed a thin crust and the toothpick comes out relatively clean. Cool and serve with or without your favorite toppings. For Class On 3-19-24: We topped the cake with some pickled mango and whipped cream.
