The combination of the sweet glaze and salty bacon is delicious in this easy cake.
Ingredients
- 1 1/2 cups granulated sugar
- 3/4 cups butter, softened
- 2 whole eggs
- 1 1/2 teaspoons vanilla extract
- 3 cups flour
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon kosher salt
- 2 1/2 cups sour cream
- 11 tablespoons brown sugar
- 2 teaspoons cinnamon
- 6 pieces of bacon, cooked and crumbled
- For The Glaze:
- 1/4 cup spiced rum
- 2 cups powdered sugar
- 1/2 cup maple syrup
Method
- Preheat the Egg to 325 degrees with a platesetter for indirect heat, and grease a 6 inch cake pan.
- Cream the sugar and butter together in a medium bowl, and then beat in the egg and vanilla.
- Whisk together the flour, baking powder, baking soda, and salt. Beat into the butter mixture alternating with the sour cream just until combined.
- Combinie together the brown sugar and cinnamon in a small bowl. Spread a third of the batter into the loaf pan and sprinkle with 1/3 of the cinnamon-sugar mixture. Repeat the layers 2 more times, ending with the top layer.
- Bake for 45 minutes or until a toothpick inserted into the center comes out clean. While the cake is cooling in the pan, make the glaze. Stir the rum into the powdered sugar gradually until the glaze is thick and smooth. (You can add additional rum if the glaze is too thick.) Add the bacon to the glaze and let sit.
- Remove the cake from the pan and let cool on a rack. Drizzle with the glaze while still warm. Sprinkle with powdered sugar and serve.
