Seared and then finished with indirect heat for a juicy steak.
Ingredients
- For The Steaks:
- 1 1/2 lbs tri-tip sirloin steaks
- Kosher salt and freshly ground black pepper, to taste
Method
- Rub steaks with salt and pepper and dry brine for a minimum of 30 mins-1hr. Note: rest your steaks 30 mins before cooking for a more even cook.
- For The Steaks: Preheat the Egg to 500°. Season steaks with salt and freshly ground black pepper to taste. Place steaks over direct heat on cast iron grates and cook until deep brown, 2–3 minutes. Flip steaks over, transfer to indirect heat, and cook until medium rare, about 3 minutes more.
- Remove steaks from heat and let rest for 10 mins. Slice and serve.
