A delicious cookie perfect for your favorite topping.

Ingredients

  1. 8 maple pecan cookies
  2. 12 ounces whipped cream
  3. 4 tbsp powdered sugar
  4. 1 tsp instant espresso powder

Method

  1. The Cookie was made famous by H2O Sushi and is available at 4 Birds Bakery now owned by a former Chef JJ's Sous & Pastry Chef. Check them out at 4birdsbakery.com.
  2. Preheat the oven to 450º. Place the cookies in the oven for 6 mins or until the cookies begin to darken. Meanwhile in a mixing bowl add the heavy whipping cream, powdered sugar, and espresso powder. Whip until the cream has stiff peaks. Serve the warm cookie with espresso whipped cream and enjoy!
