Strawberry Apricot Fruit Leather with Grilled Watermelon

This fruit leather is versatile and can easily be made with just about any fruit.

Ingredients

  1. 3 cups of diced strawberries
  2. 2 cups of chopped apricot
  3. 1/4 cup of honey
  4. 8 ounces of watermelon

Method

  1. Pre-heat the Egg to 160 degrees and set up for indirect cooking.
  2. Remove stems from strawberries and cut them into quarters. For the apricots, remove stems, and seeds, and cut them into quarters.
  3. Place apricots and strawberries in a blender and blend into a smooth liquid.
  4. Line a sheet tray with parchment paper and evenly spread the mixture onto the tray. Place on the Egg and allow to dry out for 6 hours. You will know the fruit leather is finished when it is slightly shiny and not sticky to the touch.
  5. Once ready, allow to cool and gently remove from parchment paper. Once removed, cut leather into strips or shapes.
  6. For the watermelon, Pre-heat the Egg to 400 degrees. Cut watermelon to desired size and grill for 2 minutes on each side. Serve with fruit leather.
