Sweet Potato & Apple Hash With Maple Sage Butter

A new twist on a traditional hash side dish.

Ingredients

  1. 20 ounces sweet potato
  2. 12 ounces tart green apple
  3. 4 tbsp. butter
  4. 1 tbsp. sage
  5. 1 tbsp. maple syrup
  6. 2 tsp. lemon juice
  7. 3 tbsp. Oil
  8. Salt & pepper to taste

Method

  1. Preheat Egg to 400 degrees F and set up for direct cooking with a cast iron skillet.
  2. Peel sweet potatoes and dice into 1/2 inch cubes. Set aside.
  3. Peel, core, and dice apples into 1/2 inch cubes. Submerge in water with lemon juice to prevent browning.
  4. Rough chop sage and set aside.
  5. Once the cast iron is heated and ready, place oil in the pan and add sweet potatoes. Brown sweet potatoes on each side. After potatoes are browned, add apples and brown on each side. Season hash then add sage, butter, and maple syrup to finish. Remove from egg and serve.
