Elotes are a traditional street food in Mexico, commonly made with corn.
Ingredients
- ¼ cup mayonnaise
- ¼ cup Greek yogurt
- ½ cup finely crumbled cotija or parmesan cheese, plus more for serving
- ½ teaspoon Raging River rub, plus more for serving
- ¼ cup finely chopped cilantro leaves and tender stems
- 4 ears shucked corn
- 1 lime, cut into wedges
Method
- Preheat the Egg to 425º using direct heat and a cast iron grate.
- Combine mayonnaise, Greek yogurt in a large bowl. Stir until homogenous and set aside.
- Grill the corn until it is charred on all sides, turning occasionally, about 10 minutes.
- Transfer corn to bowl with mixture and use a large spoon to evenly coat corn on all sides. Sprinkle with extra cheese and chili powder or Raging River rub and serve immediately with lime wedges.
