Elotes

Elotes are a traditional street food in Mexico, commonly made with corn.

Ingredients

  1. ¼ cup mayonnaise
  2. ¼ cup Greek yogurt
  3. ½ cup finely crumbled cotija or parmesan cheese, plus more for serving
  4. ½ teaspoon Raging River rub, plus more for serving
  5. ¼ cup finely chopped cilantro leaves and tender stems
  6. 4 ears shucked corn
  7. 1 lime, cut into wedges

Method

  1. Preheat the Egg to 425º using direct heat and a cast iron grate.
  2. Combine mayonnaise, Greek yogurt in a large bowl. Stir until homogenous and set aside.
  3. Grill the corn until it is charred on all sides, turning occasionally, about 10 minutes.
  4. Transfer corn to bowl with mixture and use a large spoon to evenly coat corn on all sides. Sprinkle with extra cheese and chili powder or Raging River rub and serve immediately with lime wedges.
