Steak and Frites Burrito

Steak and frites wrapped in a burrito, delicious!

Ingredients

  1. 4 lbs. hanger steak
  2. 3 1/2 lbs french fries, fully cooked
  3. ¼ cup garlic, minced
  4. ¼ cup parsley, chopped fine
  5. 16 ounces ranch dressing
  6. 8 large burrito shells
  7. 16 ounces pickles

Method

  1. Trim any silver skin or fat from the hanger steak, rub down with salt and pepper. Refrigerate overnight. Remove from the refrigerator 30 mins prior to cooking.
  2. Preheat Egg to 200ºF with platesetter, smoking wood, pan of water and stainless steel rack. Place the hanger on a stainless steel rack and smoke until the internal temperature reaches 110ºF. Let rest and then slice into small pieces.
  3. Preheat the flat top to 375 F. Sear the sliced hanger steak on the flat top. Season with salt and pepper. Season the fully cooked fries with salt, pepper, garlic, and parsley. Toss to combine. Lay the burrito flat then first add the seasoned fries, next the seared steak, then 2 ounces of ranch dressing.
  4. Roll tight by folding the edges in first, then tucking and rolling (careful not to tear the burrito). Take the rolled burrito and place it on the flat top flap side down. Sear until you achieve a nice golden brown. Slice the burrito in half and serve with pickles of your choice!
