Your favorite fruit can be used to make this simple tart.
Ingredients
- 3 ea apples and pears, grilled
- 3 tbsp sugar for peaches
- 2 oz sugar for cake
- ¼ cup cashew meal (almond meal works too)
- ¼ cup all-purpose flour
- ¼ teaspoon salt
- 3 tablespoons unsalted butter, melted
- 1 egg white
- 1 tablespoon olive oil
- ¼ teaspoon lemon juice
- For The Coriander Whipped Cream:
- 2 tablespoons heavy whipping cream
- 1 tbsp orange syrup
- ½ teaspoon ground coriander
- Pinch kosher salt
- 2 tablespoons ricotta
Method
- Preheat Egg to 350ºF with a platesetter for indirect heat. Spray a 9-inch round tart pan with cooking spray.
- In a large mixing bowl, whisk together the sugar, cashew meal, flour and salt. Add the butter, egg whites, olive oil and lemon juice, and whisk together until the batter is fully incorporated and no lumps remain.
- Pour the batter into the pan. Bake until a toothpick comes out clean when inserted into the center, 45 to 50 minutes. Let the tart cool completely.
- Grill peaches and macerate with sugar for at least 1 hour. Top cake with peaches, apples, pears and whipped cream.
