>These sandwich cookies are great on their own but also make a delicious accompaniment for coffee or tea.
Ingredients
- 1/2 cup all purpose flour
- 1/2 cup cornstarch
- 1/2 cup unsalted butter
- 2/3 cup sugar
- 1 each egg yolk
- 3 tbsp. powdered sugar
- 3 ounces dulce de leche
- 1/4 tsp anise seed (ground)
- 1/4 tsp vanilla extract
Method
- Set up Egg for indirect baking at 350 F.
- Allow butter to come to room temperature and once ready place in a mixing bowl with sugar and vanilla extract. Blend until smooth then add egg yolk.
- In a separate bowl, sift flour and cornstarch and combine. After sifting, add in ground anise.
- Place the butter and sugar mixture in the flour and knead together until fully combined. Shape into a ball and allow to rest for 10 minutes. Sprinkle some flour on a work surface and roll out the dough evenly. Cut out cookies and place on a baking sheet. Place cookies on Egg and bake for 20 minutes or until golden brown. Set cookies aside to cool.
- Allow cookies to cool then spread dulce de leche on one cookie and sandwich with another. Dust cookie sandwiches with powdered sugar and serve.
