>These sandwich cookies are great on their own but also make a delicious accompaniment for coffee or tea.

Ingredients

  1. 1/2 cup all purpose flour
  2. 1/2 cup cornstarch
  3. 1/2 cup unsalted butter
  4. 2/3 cup sugar
  5. 1 each egg yolk
  6. 3 tbsp. powdered sugar
  7. 3 ounces dulce de leche
  8. 1/4 tsp anise seed (ground)
  9. 1/4 tsp vanilla extract

Method

  1. Set up Egg for indirect baking at 350 F.
  2. Allow butter to come to room temperature and once ready place in a mixing bowl with sugar and vanilla extract. Blend until smooth then add egg yolk.
  3. In a separate bowl, sift flour and cornstarch and combine. After sifting, add in ground anise.
  4. Place the butter and sugar mixture in the flour and knead together until fully combined. Shape into a ball and allow to rest for 10 minutes. Sprinkle some flour on a work surface and roll out the dough evenly. Cut out cookies and place on a baking sheet. Place cookies on Egg and bake for 20 minutes or until golden brown. Set cookies aside to cool.
  5. Allow cookies to cool then spread dulce de leche on one cookie and sandwich with another. Dust cookie sandwiches with powdered sugar and serve.
