This simple and delicious jerky is more tender and less chewy than traditional jerky.
Ingredients
- 1 lb. ground pork
- 1 lb. ground lamb
- Marinade:
- 2 tbsp. cold water
- 4.5 tbsp. brown sugar
- 1 tsp. kosher salt
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 2 tsp. ground black pepper
- 2 tsp. cayenne pepper
- .4 tsp. prage powder #1 (curing salt)
- 1 tsp. corn syrup solids
- 2 ounces Hickory Wood (for smoking)
Method
- Set up egg for indirect heat and set to 200 degrees.
- Combine all ingredients in a bowl and thoroughly mix.
- Spread mixture onto a baking sheet and cover with wax paper. Using a rolling pin, roll the mixture out onto the sheet until it is a quarter inch thick.
- Cut the jerky into 4-inch by 1-inch strips.
- Place the wood on the heat then lay the jerky strips on the grate. Allow cooking for 4 hours. Jerky is finished when it bends but does not break.
