Ground Meat Jerky

This simple and delicious jerky is more tender and less chewy than traditional jerky.

Ingredients

  1. 1 lb. ground pork
  2. 1 lb. ground lamb
  3. Marinade:
  4. 2 tbsp. cold water
  5. 4.5 tbsp. brown sugar
  6. 1 tsp. kosher salt
  7. 2 tsp. garlic powder
  8. 2 tsp. onion powder
  9. 2 tsp. ground black pepper
  10. 2 tsp. cayenne pepper
  11. .4 tsp. prage powder #1 (curing salt)
  12. 1 tsp. corn syrup solids
  13. 2 ounces Hickory Wood (for smoking)

Method

  1. Set up egg for indirect heat and set to 200 degrees.
  2. Combine all ingredients in a bowl and thoroughly mix.
  3. Spread mixture onto a baking sheet and cover with wax paper. Using a rolling pin, roll the mixture out onto the sheet until it is a quarter inch thick.
  4. Cut the jerky into 4-inch by 1-inch strips.
  5. Place the wood on the heat then lay the jerky strips on the grate. Allow cooking for 4 hours. Jerky is finished when it bends but does not break.
