Ingredients
- 1 cup sugar
- ½ cup black pepper
- ½ cup seasoned salt
- ½ cup kosher salt
- 2 tablespoons cayenne
- 12 pounds brisket
Method
- Combine the ingredients for the rub. Rub the meat (remove any excess fat and all visual silver skin) and let sit in the refrigerator for 24 hours.
- Remove from the refrigerator, and preheat the EGG to 225º. Roast until an internal temperature reaches 160º F.(6-8 hrs) Remove from the EGG, wrap heavily in foil and continue to cook until an internal temperature reaches 185º.(1-2 hrs) Let rest for 20 minutes and slice or shred and serve with a slice of Texas Toast and your favorite classic BBQ side dishes.
