Creamy black bean dressing compliments these grilled potatoes perfectly!
Ingredients
- 2 lbs potatoes
- For the dressing
- 7 ounces, cooked black beans
- ½ lime, juiced
- 2 teaspoons honey
- Salt and pepper to taste
Method
- Preheat the Egg to 400° and set up direct heat with cast iron grates.
- Peel and slice the potatoes into wedges and place in a bowl with water and a splash of lemon juice (the citric acid keeps the potatoes from oxidizing).
- Place the potato wedges on the preheated Egg. Flip the wedges about 10 minutes in. After 20-30 minutes of cook time the potatoes should have great color, but they may not feel fully cooked. At this point you are going to want to shut the grill down completely to kill the fire and let the potatoes bake for about 10 minutes. Meanwhile, make the dressing. In a blender add all of the ingredients for the dressing and blend until smooth. If the dressing is too thick, add a splash of water.
- Remove the potatoes from the grill and toss with the dressing, add salt and pepper to taste, serve, and enjoy!
