Cheesy Polenta

An original peasant food, this versatile dish can be enjoyed in many forms - cheesy, creamy, firm or grilled.

Ingredients

  1. 5 cups chicken broth
  2. 2 cloves garlic, minced
  3. 1 ¼ cups polenta
  4. 5 ounces extra-sharp cheddar cheese, shredded
  5. ¼ cup of butter
  6. 5 tbsp heavy cream
  7. Salt and pepper, to taste

Method

  1. In a medium saucepan, bring the broth to a boil. Add the garlic and slowly stir in the polenta. Reduce the heat to medium low and cook, stirring frequently until the polenta is tender, 5-10 mins depending on the polenta. Remove from the heat and stir in butter, cream, and cheese. Season with salt and pepper and serve immediately.
