Greek Feta Relish with Toasted Focaccia

An easy appetizer bursting with flavor!

Ingredients

  1. 16 ounces focaccia, sliced
  2. 28 ounces tomatoes, diced and drained
  3. 3 cloves garlic, minced
  4. ½ tablespoon kosher salt
  5. 10 leaf basil, 1/8 inch cut
  6. 10 ounce kalamata olive, 1/4 inch cut
  7. 1 small red onion, 1/4 inch diced
  8. 3 ounces feta cheese, dry
  9. 1 ounce red wine vinegar
  10. 1 ounce canola oil, or salad oil

Method

  1. Preheat flat top to 375º. Place focaccia slices on the flat top and cook until both sides are slightly crispy. Meanwhile, mix the remaining ingredients and taste for seasonings. Adjust as needed. Serve the relish with hot bread and enjoy!
