Grilled watermelon is a tasty addition to fruit salad.
Ingredients
- 1 pound honeydew melon, cut into small pieces
- 1/2 cup chopped mint
- 2 pounds watermelon, cut into 1/2 inch pieces receiving a few large pieces for grilling
- 2 cups arugula
- 1 cup feta cheese
- 1 cup red onion, diced
- For The Dressing:
- 3 cloves black garlic
- 3 tbsp black vinegar
- 3 tbsp olive oil
- 1 tbsp lime juice
- 1 tbsp mayo
- Salt and pepper to taste
- 8 oz grilled naan (to serve with salad)
Method
- Preheat the Egg to 500º using direct heat and a cast iron grate.
- Once the Egg is preheated, grill watermelon until grill marks form. about 2-3 minutes per side. Remove from the grill and allow to cool.
- For The Dressing: add all ingredients to a blender and blend until smooth. Season with salt and pepper.
- Cut the grilled watermelon 1/2-inch-thick slices. Add diced melon, mint, diced watermelon, arugula, feta, and onions to a large mixing bowl. Add dressing, mix well and serve. For class on 7/2/24, we served it with grilled naan, any bread works well with this salad.
