This is a fun and simple side dish to elevate your Thanksgiving dinner!
Ingredients
- 1 ½ cups butter, plus more for baking dishes
- 3 lbs. carrots, peeled and sliced
- Salt
- 1 ½ cups sugar
- 6 large eggs
- ½ cup all-purpose flour
- 1 tablespoon baking powder
- ¼ teaspoon ground cinnamon
Method
- Preheat the Egg to 425º using direct heat. Grill the carrots for about 2-3 minutes per side or until grill marks form.
- Bring a large pot of salted water to a boil over medium heat. Add the carrots and cook until tender. Drain and set aside.
- Convert the Egg to 400º using indirect heat. Lightly grease muffin tins.
- In a food processor, add the sugar and eggs and pulse to combine. Add the flour, baking powder, cinnamon and butter; pulse until smooth. Add the carrots and pulse to combine. Spoon the mixture into the prepared muffin tins and bake until set, about 15-20 minutes. Remove from the grill and serve immediately.
