Black Garlic Roasted Potatoes

Ingredients

  1. 24 ounces baby potatoes
  2. 4 cloves black garlic
  3. 4 tablespoons oil
  4. ¼ teaspoon salt
  5. Pepper
  6. 1 tablespoon rice wine vinegar 1 tablespoon chives
  7. 1 tablespoon chives
  8. 2-3 tablespoons fresh dill

Method

  1. Preheat the Egg to medium high heat.
  2. Blanch potatoes in salted boiling water, until just tender, about 10-15 minutes, depending on size.
  3. Mash black garlic using a fork with salt and 1 T oil, until it becomes a chunky paste. Add the remaining oil, vinegar, and pepper.
  4. Strain the tender potatoes, and toss with 1 T of the vinaigrette just enough to lightly coat. Grill the potatoes until nicely charred.
  5. Toss with the rest of the vinaigrette, and fresh herbs. Serve immediately.
