Watermelon Cucumber Salad

This is a cool and refreshing salad for summer!


  • 1 small watermelon, rine removed and sliced into 1 1/2
  • 1 english cucumber, quartered lengthwise
  • 1 scallion, sliced thin
  • 1/2 cup chopped cilantro
  • 1 jalapeño, seeded and minced
  • 2 limes, juiced
  • salt and pepper, as needed
  • 2 ounces feta cheese, or as desired


  • 1. Preheat the EGG to 450º using direct heat and a cast iron grate. Grill the watermelon on one side for about 3-4 minutes, or until char marks form. Chop into bite size pieces and set aside.
  • 2. Grill the cucumbers for 2-3 minutes or until char marks form. Chop the cucumbers into bite size pieces and set aside.
  • 3. Combine the remaining ingredients with the cucumber and watermelon. Season to taste and serve either room temperature or chilled. For best results, eat within 24 hours to avoid the fruit getting too smokey.
