Vegetable Lasagna

Nutritional Information

Use any type of vegetables desired for this flavorful lasagna.


  • 7 ounces lowfat ricotta
  • 1/3 cup kalamata olive, chopped and pitted
  • 1 tablespoon fresh thyme, chopped
  • 1 1/2 teaspoons dried basil
  • 1 1/2 teaspoons dried oregano
  • 2 teaspoons garlic, minced
  • 4 cups marinara sauce
  • black pepper, to taste
  • 2 small zucchini, sliced
  • 2 small summer squash, seeded and sliced
  • 1 red pepper, seeded
  • 1/4 cup Parmesan, grated


  • 1. Heat the Egg to 400°F using direct heat and a cast iron grate.
  • 2. Grill the vegetables just until char marks form. Mix goat cheese, olives, thyme, basil, oregano, and garlic in a bowl; season with salt and pepper. Spread 1 cup pasta sauce on the bottom of an 8
