Tomato Soup

This velvety soup is perfect for a cold winter night.


  • 2 pounds tomatoes
  • 1/2 ounces fresh basil
  • 1 cup heavy (whipping) cream
  • 2 cloves garlic, minced
  • 1 1/2 tablespoons tomato paste
  • salt and pepper, to taste


  • 1. Roast the tomatoes at 400º using indirect heat for 45 minutes. In a large pot add the tomatoes, garlic and cream and cook until slightly thickened. Add basil and tomato paste; puree until smooth. If you want a completely smooth soup, strain. If you like some texture, do not strain. Season with salt and pepper and serve.
