Tarragon Olive Oil Cake

Tarragon in this cake recipe, adds a nice herbal flavor that works well with the caramel apples!


  • For the cake:
  • 6 1/2 ounces good olive oil
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tablespoon finely grated lemon zest
  • 1/2 teaspoon salt
  • 2/3 cup buttermilk
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons powdered sugar
  • 2 teaspoons vanilla bean paste
  • 2 tablespoons fresh tarragon
  • For the Apples:
  • 6 ounces apple, diced
  • 1/2 teaspoon cinnamon, for apples
  • salted caramel, for apples
  • fresh whipped cream, for garnish


  • 1. For the cake: Preheat the Egg to 325º using indirect heat.
  • 2. Beat sugar and zest together until fragrant. Add eggs and beat medium-high speed until pale yellow and foamy, 2 to 3 minutes. Add salt, buttermilk and olive oil and beat until thoroughly combined, about 1 minute.
  • 3. Whisk together flour, baking powder, powdered sugar and baking soda in small bowl. Decrease mixer speed to lowest setting and add flour mixture. Beat just until combined, scraping the sides and bottom of bowl with rubber spatula as necessary.
  • 4. Scrape batter into prepared pan and bake until cake tester inserted in center of cake comes out clean, 15 to 35 minutes depending on size of cakes.
  • 5. Cool cake in pan 10 minutes. Combine the apples, cinnamon and caramel until an even mixture forms. Set aside. Garnish cake with apples and whipped cream.

In our Labor Day class on 8/31/16, we used grilled fruit instead of caramelized apples.
