Swedish Meatballs

Our take on a swedish classic!


  • 1/2 cup panko bread crumbs
  • 1/4 cup milk
  • 3 tablespoons clarified butter
  • 1/2 cup grated onion
  • kosher salt and black pepper to taste
  • 3/4 pounds ground chuck
  • 3/4 pounds ground pork
  • 2 large egg yolks
  • 1/2 teaspoon black pepper
  • 14 teaspoon ground all spice
  • 1/4 teaspoon grated nutmeg
  • 1/4 cup all purpose flour
  • 1 tablespoon melted butter
  • 3 cups beef broth
  • 1/4 cup heavy cream
  • grape wood, for smoking


  • 1. Preheat the EGG to 225º using indirect heat and the smoking wood. Smoke the pork until an internal temperature reaches 140º, about an hour. Let it rest for a few minutes before slicing and serving.
  • 2. In the bowl of a stand mixer, combine the bread crumbs and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.
  • 3. Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.
  • 4. Smoke the meatballs until they reach an internal temperature of 165º, about 45 minutes to 1 hour.
  • 5. For the Sauce: Melt the butter in a sauce pot. Add the flour and make a roux. Add the beef broth and simmer until thick. Remove from the heat and add the cream. Stir to combine, season to taste and serve with the meatballs.
