Summer Salad with Buttermilk Dressing

This salad is light and creamy and is full of grilled vegetables.

Ingredients

  • For the Dressing:
  • 1/4 cup buttermilk
  • 2 tablespoons mayo
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped flat leaf parsley
  • kosher salt and black pepper
  • For the Salad:
  • 1 head romaine lettuce, chopped
  • 4 radishes, sliced
  • 2 yellow bell peppers, quartered
  • 2 small red onion, halved
  • 2 english cucumber, halved lengthwise
  • olive oil for grilling, as needed
  • any type of cheese, if desired

Directions

  • 1. Preheat the EGG to 400º using direct heat and a cast iron grate. Toss the peppers, onion and cucumber in a small amount of olive oil. Grill the vegetables until char marks form about 2-5 minutes. Remove from the grill, chop, and set aside.
  • 2. For the Dressing: Whisk together the buttermilk, mayonnaise, chives and parsley, in a large bowl. Add the romaine, radishes, bell pepper, onion, and cucumbers; toss to combine. Season with salt and pepper to taste, garnish with cheese (if using) and serve immediately.
