  • 2 cups Persimmon pulp
  • 2 cups Sugar
  • 2 Eggs, beaten
  • 1 1/2 cups Buttermilk
  • 1 teaspoon Baing soda
  • 1 1/2 cups Flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Ground cinnamon
  • Pinch Salt
  • 1/4 cup Heavy cream
  • 4 tablespoons Butter, melted
  • Carmel Sauce:
  • 1/2 cup Sugar
  • 1/4 cup Water
  • 1 teaspoon Lemon Juice
  • 1 Sprig Rosemary, left whole
  • To taste Sea salt
  • 1/2 cup Heavy (whipping) cream, more as needed
  • To taste Whipped cream, for serving
