Sriracha Deviled Eggs

Nutritional Information

You can make these eggs as spicy as you want by adding less or more of the Sriracha.


  • 10 each hard-cooked eggs
  • 4 tablespoons Sriracha mayo (recipe follows)
  • 1/2 teaspoon Dijon mustard
  • To taste kosher salt
  • To taste fresh ground black pepper
  • as needed fresh chives, for garnish
  • For the Sriracha Mayo:
  • 1/2 cup mayonnaise
  • 5 tablespoons Sriracha
  • 1/2 tablespoon fresh lime juice, more as needed


  • 1. For the Sriracha Mayonnaise;
  • 2. In a bowl, combine the mayonnaise, Sriracha and lime juice. Stir together until completely combined. Adjust flavoring, adding more sriracha as needed and adding more lime juice to adjust the consistency. Set aside.
  • 3. For the Eggs:
  • 4. Put eggs in a pot with cold water to cover. Bring water to a boil. As soon as it has boiled turn off the heat and set a timer for 8 minutes. Remove eggs from the pot and chill in an ice bath until completely cooled. Carefully peel the shells off the eggs.
  • 5. Cut eggs in half lengthwise. Remove the egg yolks and place them in a bowl. Using a fork, break up the yolks. Stir in the Sriracha mayo, mustard, salt and pepper, blending until smooth. Taste the egg mixture and adjust seasoning with salt and pepper. Fill a pastry bag fitted with a star tip and pipe the yolk mixture back into the egg whites. Garnish with chives, serve or cover and refrigerate immediately.
  • 6. Note: You will have extra Sriracha Mayonnaise. Store in a plastic container covered in the refrigerator.
