Spicy Tomato Jam

Tomato jam works well on sandwiches, with charcuterie or even a spoon!


  • 5 cups diced peeled and seeded tomatoes, or 5 cups canned diced tomatoes
  • 3/4 cup light brown sugar, packed
  • 4 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic, finely minced
  • 2 cinnamon sticks
  • 1 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon aleppo pepper
  • 1 teaspoon ground ancho chili pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon allspice
  • 1 1/2 tablespoons freshly squeezed lemon juice


  • 1. In a food processor, pulse the tomatoes until finely chopped, with small chunks of tomato remaining
  • 2. In a 4 or 5 quart, non-reactive, saucepan, combine all the ingredients except the 1 1/2 tablespoons lemon juice. Bring to a simmer. Cook, stirring occasionally until the liquid has reduced and the tomato mixture has started to thicken, about 20 to 30 minutes. (The timing will depend on several factors; the juiciness of the tomatoes, the cooking vessel, and the cooking temperature.)
  • 3. Continue to cook an additional 15 to 20 minutes, stirring more frequently to prevent the jam from burning. Once the mixture takes on a glossy appearance and a jam-like consistency, remove it from the heat and allow it to cool to room temperature. Stir in the remaining 1 1/2 tablespoons lemon juice.
  • 4. Season to taste and serve as desired
