Spicy Garlic Chicken Wings

These wings are roasted, then grilled, giving them a crispy texture.


  • 5 pound Chicken Wings, broken down into wingettes and drumettes
  • 1 cup Frank's Red Hot Sauce, or desired brand
  • 1 teaspoon Sugar
  • 1 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Cayenne Pepper
  • 1/2 teaspoon Worcestershire Sauce
  • 1 egg yolk
  • 2 teaspoons Water
  • 2 teaspoons Cornstarch
  • Salt Brine:
  • 1 cup kosher salt
  • 48 ounces water


  • 1. Brine the wings for about 1 hour. Remove from the brine and pat dry.
  • 2. Preheat the EGG to 350º using indirect heat. Roast the wings 45 minutes.
  • 3. Remove from the EGG and convert the EGG to direct heat with a cast iron grate. Cook the wings at 400º for about 2-3 minutes per side or until crisp.
  • 4. Mix all of the remaining ingredients except for the hot sauce. Set aside. Heat the hot sauce in a sauce pot until heated throughout. Temper in the hot sauce into the egg yolk mixture. Return to the sauce pot, stirring constantly, and bring to a simmer.
  • 5. Toss the wings in the sauce and serve.

On 1/26/16 and 1/27/16 we smoked these wings at 225º using indirect heat for 2 hours instead of roasting them. Once smoked, remove from the grill and continue with the direct grilling directions.
